Lemon rice / Elumichai sadam is a traditional south Indian Dish.It is made by flavoring cooked rice with the sourness of lemon.It is a non spicy variety rice that everyone will love.It is very opt for lunch boxes and for picnic.At home we prepare this dish along with some coriander seeds thuvaiyal / Ellu thuvaiyal for picnic because they don’t get spoiled easily.You can make this even with the left over rice.Lemon rice can be had with thogayal,papadums,pickle or some fries. Amma used to make Potato/Brinjal/Yam fry for lemon rice.I love it.I make this recipe the way my mom cooks it.
Cooking Time : 15 mins
Serves : 2 persons
Cooked rice – 2 and 1/2 cup
Lemon Juice – 2 tbsp( you can alter according to your taste)
Ground nuts / Peanuts – 2 tbsp
Cashew nuts – 10
Chana dal – 1 tbsp
Urad dal – 1 tsp
Dried Red Chilli – 6
Green Chilli – 2 (Slit into halves)
Asafoetida – 1/4 tsp
Turmeric powder – 1/4 tsp
Mustard seeds – 1/4 tsp
Sesame oil – 2 tbsp
Salt to taste
1.I used pressure cooker to cook rice.I took 1 cup of rice soaked it in water for about 20 mins.Then drained the water and added it to pressure cooker along with 2 cups of water and salt.Put the whistle and cooked for about 10 mins in medium flame for about 4 whistle.If you are using open pot Cook rice till they are done.But not mushy and the grains are separate..Spread the rice in a plate to cool down..squeeze the lemon and take juice and keep aside
2.To a pan,add sesame oil and fry cashew nuts and ground nuts and keep them aside.
3.Then to the same pan add mustard seeds.Allow them to crackle.Then add Channa dal and urad dal. Cook in simmer flame else the dal may get burnt.
4.Add Red chilli,Green chilli,Curry leaves,Hing.
5.Then add Tumeric powder and mix well.Add Lemon juice and cook for about 1 min so they get little reduced.Add fried cashews and peanuts,mix them well and switch off the flame.These nuts and dals add crunchiness to the rice.
6.Add cooked rice and mix well.Check for salt and sourness, add salt and lemon juice accordingly.
