Mutton Biryani

Mostly all Non-veg lovers love Biryani.I am a great fan of biryani. My inspiration for cooking biryani is my dad.He makes biryani for eid and we share it with our families,neighbors and friends.It was so happy and fun those days watching them cooking and eating together.Now as I am here I have to make my own biryani for myself.Everyone at my home loves my biryani. Dad used to say Jeerakasamba / Jeerakasala rice is the best rice for biryani. It tastes awesome.But I have made this biryani with basmati rice.I love the long grain rice in my biryani. You can try this recipe with jeerakasala/jeerakasamba rice and Here is how I make mutton biryani using pressure cooker.

Preparation Time : 20 mins
Cooking Time : 40  mins
Serves : 3 persons


Ghee – 6 tbsp
Oil – 1 tbsp
Basmati Rice – 2 cups
Mutton – 1/2 kg
Bay leaves – 2
Caradamon – 5
Cinnamon – 2 (1 inch  stick)
Cumin seeds – 1/4 tsp
Fennel seeds – 1/4 tsp
Green Chilli – 4
Cashew nuts – 10
Kismis – 10
Onion – 3(finely sliced)
Small onion – 1/2 cup
Tomato – 3(finely chopped)
Coriander leaves – a handful
Mint leaves – a handful
Ginger garlic paste – 1 and 1/2 tbsp
Turmeric powder – 1/2 tsp
Red chilli powder – 2 and 1/2 tsp
Coriander powder – 3 tsp
Cumin powder – 1 tsp
Fennel powder – 1/2 tsp
Pepper powder – 1/2 tsp
Garam masala – 1/2 tsp
Curd – 1/2 cup
Lemon – 1 
Salt to taste


1.Clean the basmati rice with water and Soak it in water for 30 mins.Clean Mutton well.Add small onions to a blender and make a fine paste of it.Squeeze the lemon and take lemon juice.

2.To a pressure cooker, add the cleaned mutton ,about 1 tsp of salt,Red chilli powder,Turmeric powder,Coriander powder,Cumin powder,Fennel powder,Pepper powder,Garam masala,Curd,about 1 tbsp of ginger garlic paste.

3.Add some coriander leaves and mint leaves.Add about 1 and 1/2 cup water to it.

4.Cook it for about 5 – 6 whistles in pressure cooker till the mutton gets cooked.Remove the mutton pieces from it.For 2 cups rice we need to add 3 cups of water.Measure this mutton stock and for the remaining quantity add water.keep it aside.

5.To another pressure cooker add about 5 tbsp of ghee.Once the ghee gets hot add cumin and fennel seeds.Saute them.Then add Bay leaves,Cinnamon sticks,Cardamon,Kismis and Cashews fry them well.

6.Add green chillies,Onions and saute them well.Add little salt for onions to cook fast.I added little oil for the onions to fry well.When the onions turn little golden add the small onion paste.

7.Cook till the onions become light golden brown.Add ginger garlic paste.cook until the raw smell goes.Add mint and coriander leaves.

8.Add finely chopped Tomatoes and cook them well.Once they turned mushy.Add lemon juice.

9.Add cooked mutton pieces mix them well with the onions and tomatoes.Drain water from the basmati rice and add it.Mix well with the masala. Add mutton stock.

10.Add some mint and coriander leaves and some ghee over it.

11.Wait for the added mutton stock to boil.When it starts boiling close the lid and make the flame simmer and cook for 10 mins.After 10 mins put off the flame.Open the lid after 10-15 mins. Awesome Mutton Biryani is ready.Serve it with Raita. I served Biryani with Cucumber Carrot raita and Brinjal katta.
