Snake gourd/Pudalangai stir fry

 


Snake gourd/Pudalangai stir fry is different from the usual Snake gourd/Pudalangai poriyal. It is so tasty and easy to make.You can cook it with the ingredients available at your masala box.Even people who don’t like this vegetable will surely love this stir fry.You can make it for your kid’s lunch.They will love this stir fry.This stir fry is an excellent side dish for Sambar rice,Curd rice,Lemon rice.

INGREDIENTS REQUIRED

 
Snake gourd/Pudalangai – 350 gm(cut into small pieces)
Onion – 1(medium size finely chopped)
Mustard seeds – 1/4 tsp
Urad dal – 1/4 tsp
Red chilli – 2
Curry leaves – a few
Turmeric powder – 1/4 tsp
Red chilli powder – 1 and 1/2 tsp
Coriander powder – 1/2 tsp
Cumin powder – 1/2 tsp
Coconut oil – 2 tbsp
Asafoetida – a pinch
 

METHOD

1.Take coconut oil in  a pan,Once it gets hot add mustard seeds.After the mustard seeds starts cracking add urad dal,red chilli.



2.Add chopped onions,curry leaves,asafoetida to it.Fry it till the onions get translucent.Then add the snake gourd pieces into the pan and stir it well.Add salt to your taste.




3.Never add water for the snake gourd to cook .Allow it to cook in the oil itself.When they are half cooked add turmeric powder,coriander powder,cumin powder and red chilli powder. Cook till raw smell of masala powder goes and the snake gourd is fully cooked.Yummy Snake gourd/Pudalangai stir fry is ready to serve.
