Egg Kothu Parotta

Kothu Parotta is a very popular dish in Tamilnadu. You can find this dish in all veg and non veg hotels menu.It is also famous street food there.I love kothu parotta a lot from my childhood.I love the sound they make with the spoon on the iron tawa while making kothu parotta in street side food stalls.Weekly once for dinner I will make this egg kothu parotta along with onion raita. I will use leftover parottas,egg/chicken/mutton Kuzhambu for making it.You also use ready made parotta or home made ones.It is so simple and easy to prepare and enjoy at home.Let’s get into the recipe.

Cooking Time : 15 mins
Serves : 2 persons

INGREDIENTS REQUIRED

Parotta – 5

Egg – 2(large size eggs)
Onion – 2 (finely chopped)
Tomato – 1(finely chopped)
Curry leaves – 1 sprig
Green chilli -2 (finely chopped)
Coriander leaves – a few 
Turmeric powder – 1/2 tsp
Fennel powder –  1/2 tsp
Pepper powder – 1/2 tsp
Coriander powder – 1/2 tsp
Red chilli powder – 1 and 1/2 tsp
Ginger garlic paste – 1 tsp
Egg Kuzhambu / Egg curry – 1/2 cup
Salt to taste

For tempering

Oil – 2 tsp
Cinnamon – 1 (1 inch stick)
Cloves – 3
Cardamon – 2

METHOD

1.If you are using left over parottas steam it in an idli maker for 5 minutes and shred them into fine small pieces.

2.In a pan add oil and saute cinnamon,cloves and cardamon till they crackle.Add chopped onions.

3.Saute onions to light brown.Add ginger garlic paste.Saute till the raw smell goes.

4.Add Curry leaves,coriander leaves and chopped tomatoes.Cook till the tomatoes turn mashy.

5.Add Turmeric powder,Fennel powder,Pepper powder,Coriander powder,Red chilli powder,little salt to it and mix well.

6.Bring the prepared masalas to a side.To the other side add little oil for frying egg.Break egg shells and add egg to it.

7.Don’t disturb eggs for a minute.Then scramble the egg with ladle.Then mix the scrambled egg together with the masala.

8.Add egg kuzhambu/curry. I used left over egg kuzhambu. Click here for egg kuzhambu recipe.Add only the kuzhambu/curry.You can also use mutton or chicken kuzhambu/curry and mix it well with the prepared egg masala.

9.Then add shredded parotta to it and mix well with the masala. Serve it hot with onion raita.
