Beans Poriyal is a South Indian style stir fry that goes well with Rice.You can also have it with Chapati or Roti.This Poriyal is prepared by sauteing cooked beans in oil with onions,green chilli and grated coconut.I mostly use coconut oil for stir fries they give good flavor to dish.Green beans boost immunity.It improves bone health.I also make a spicy stir fry with beans which I will post soon.
Here is the recipe for it.
Preparation Time : 10 mins
Cooking Time : 20 mins
Serves : 2 persons
Green Beans – 1 and 1/2 cups (finely chopped)
Coconut oil – 3 tsp
Mustard seeds – 1/4 tsp
Cumin seeds – 1/2 tsp
Onion – 1/2 (roughly chopped)
Green chillies – 2 (finely chopped)
Curry leaves – 1 sprig
Grated Coconut – 1/3 cup
Salt to taste
1.In a pot cook beans along with water and salt.After they are cooked well drain excess water and keep it aside.
2.To a pan add oil.Once it get hot add mustard seeds let them crackle.Then add cumin seeds.
3.Add onions,green chillies,curry leaves and salt.Saute them well in oil.
4.Add cooked green beans and saute them well for about 5 minutes.Finally add grated coconut and stir it well with the beans for few minutes.Serve it with Rice.
