Nei soru / Ghee rice is a famous dish in our region.Like biryani it is also a special rice cooked for marriage feast.We also used to make this rice for guests along with some non veg curries.It goes well with all non veg curries.My favourite combo is ghee rice,mutton kuzhambu,Chicken fry and onion raita.This is a one pot recipe.I used pressure cooker.Try this delicious ,simple rice recipe at home and enjoy your meal.

Serves : 2 to 3 Persons
Basmati rice – 1 and 1/4 cup
Onion – 2 (finely sliced)
Green chilli – 4
Salt to taste
Coriander leaves – a handful
Ginger garlic paste – 1/2 tbsp
Bay leaves- 2
Cinnamon stick -2(1 inch stick)
Cardamon – 5
Cloves – 5
Cashew nuts – 10
Ghee – 4tbsp
1.Clean and Soak basmati rice in water for 30 minutes.I first soak the rice and then start chopping onion.So by the time I start cooking and when its about to add rice.It will take nearly 30 minutes.You can also use jeerakasamba or normal rice at home.
2.To a pressure cooker.Add ghee.Add bay leaves,Cinnamon sticks,cardamon,cloves.
3.Add cashew nuts,green chillies,sliced onions.
4.Fry till the onion gets light golden brown.Add salt.Add ginger garlic paste cook till the raw smell goes.
5.Once the onion turns nice golden color add the coriander leaves.Drain the soaked basmati rice and add it.Mix well with the sauteed onion.
6.Add 2 and 1/2 cup of water to it and mix well.check for salt.it should be a bit salty then when the rice gets cooked it will be correct.If you are using other rice add water twice the quantity of rice.Allow the water to boil.When the water starts boiling.Close the cooker with a lid with whistle on it.Cook for 10 minutes in low flame then put off the flame.Allow the pressure to get released by itself and then open the lid.Serve it.Awesome ghee rice is ready.
