Potato capsicum Fry

I made this Potato capsicum Fry along with Puli kuzhambu last thursday.Potato combines well with capsicum and this stir fry was tasting yummy.It is a quick dish.I always make stir fry for my lunch.This also goes well with Chapati.You can have it with rice or any Kuzhambu.Here is my version of Potato Capsicum Fry.

Preparation Time : 10 mins
Cooking Time : 15 mins 
Serves : 2-3 persons

INGREDIENTS REQUIRED

Potato – 2 medium sized (diced into small bite size)

Capsicum – 1 Big (diced into small bite size)
Salt to taste
Turmeric powder – 1/4 tsp
Pepper powder – 1/2 tsp
Red chilli powder – 1 tsp
Cumin powder – 1/2 tsp

For tempering

Oil – 1 tbsp
Mustard seeds – 1/4 tsp
Urad dal – 1 tsp
Cumin seeds – 1/2 tsp
Onion – 1 (roughly chopped)

METHOD

1.To a pan add oil.Once it get hot.Add mustard seeds and let them crackle.Add cumin seeds and urad dal.

2.Add chopped onions.Saute them till they turn translucent.Add diced potatoes.

3.When the potatoes get half cooked.Add curry leaves,required amount of salt.

4.Add chopped capsicum and mix well.

5.Add turmeric powder,Pepper powder,Red chilli powder,Cumin powder and mix well.Cook till the masalas raw smell goes and potatoes,capsicum are fully cooked.

Potato Capsicum Fry is ready.
