Spicy Bitter Gourd Stir Fry / Pagarkai Poriyal

In Spite of the bitterness of Bitter Gourd.I like it a lot.I make Kuzhambu,fry,Stir fry,Thoran regularly with it.I like the smaller size bitter gourd than the bigger one.Here only bigger size bitter gourds are available.I cook it at least once in two weeks.It helps to maintain blood sugar levels and lower bad cholesterol levels.

Cooking Time :20 mins
Serves : 3 persons


Bitter Gourd – 400 g(deseeded and cut into small cubes)

Onion – 1 ( finely chopped)
Curry leaves – 1 sprig
Mustard seeds – 1/4 tsp
Urad dal – 1 tsp
Salt to taste
Turmeric powder – 1/2 tsp
Red chilli powder – 2 tsp
Coriander powder – 1 tsp
Asafoetida – a pinch
Oil – 2 tbsp


1.Clean bitter gourd,deseed it and cut them into small cubes.Soak it in salt water it helps in removing bitterness.To a pan add oil.When it gets hot add mustard seeds.Allow them to crackle then add urad dal and cumin seeds.

2.When the cumin seeds and urad dal get fried well.Add curry leaves,chopped onions,Asafoetida.Saute them till they get light golden.
3.Add chopped bitter gourd.Allow them to cook and stir it occasionally.When they are half cooked.Add salt and all powders(Turmeric powder,Red chilli powder,coriander powder).
4.Mix the masalas well with the bitter gourd and cook till they are fully cooked.You can add a little piece of jaggery if you want to reduce bitterness.
Serve it with Rice and Sambar,Rasam or Puli Kuzhambu.
