Surakkai Payasam / Bottle gourd Payasam

I had some bottle gourd left in my refrigerator so planned for a payasam with it.It is tasty and easy to make.I made it along with my lunch.It is healthy as well.You can never guess that the payasam is made with bottle gourd.

Cooking Time : 20 mins
Serves : 2 Persons

INGREDIENTS REQUIRED

Bottle gourd – 1/2 cup(peeled,Deseeded,Grated)

Sugar – 1/4 cup
Cardamon powder – 1/4 tsp
Cashew nuts – 8
Almonds – 5 
Ghee – 2 tbsp
Milk – 1 cup

METHOD

1.To a pan add the grated bottle gourd and cook it till the raw smell goes and the water in the bottle gourd evaporates.

2.Add sugar.I used brown sugar you can also use white sugar.

3.Add ghee to it.Mix well and let the sugar caramelize.

4.Add cardamon powder or 2-3 cardamon pieces.

5.Add 1 cup of milk and allow it to boil.When the milk begins to boil.Remove it from the flame.

6.To a pan add about 1 tsp of ghee and roast almonds and cashew nuts to golden and add it to the payasam.Serve it hot or chilled.
