Vangi bath/Brinjal Rice

Today my lunch was Vangibath/Brinjal Rice along with Pappadams.Vangi bath is a south Indian rice based dish made with sauteed brinjal seasoned with a spicy Vangi bath powder.I used homemade vangi bath powder.Adjust red chillies to your spicy tolerance.You can also pack this for kids lunch box.Its so easy,tasty.Let’s get into the recipe.

Cooking Time : 20 mins 
Serves : 2 persons


Sesame seeds – 3 tbsp

Mustard seeds – 1/4 tsp
Chana dal – 1/2 tbsp
Urad dal – 1 tsp
Groundnut – 2 tbsp
Cooked Rice – 2 cups
Brinjal – 260 g (diced)
Tamarind extract – 1/4 cup 
Dried round chilli – 5 / Dried long chilli – 2
Curry leaves – 2 sprig
Asafoetida – a pinch
Salt to taste

For Vangi bath powder

Chana dal – 1 tbsp

Coriander seeds – 1 and 1/2 tbsp
Sesame seeds – 1 tbsp
Urad dal – 1/2 tbsp
Dried Red Chilli – 6
Grated Coconut – 1/4 cup
Fenugreek seeds – 1/2 tsp


1.In a pan add 1/2 tsp of oil and roast all the ingredients given in for vangi bath powder except Grated coconut for few minutes till nice aroma comes.Finally add grated coconut and roast it for few more seconds.

2.Allow the roasted ingredients to cool down and grind them to a powder in mixie.

3.To a pan add 3 tbsp of sesame oil.Once they get hot add mustard seeds.Allow them to crackle then add Channa dal. Then add urad dal let them turn light golden.

4.Now add Ground nut,Dried red chilli,Curry leaves

5.Add onions.Saute them till they turn translucent.

6.Add diced brinjal to it.Saute it well in oil.Add Asafoetida,required amount of salt.When they are half cooked add tamarind extract(runny extract).Cook till the brinjal gets nicely cooked.

7.Add grinded Vangi bath powder mix it well with the brinjal. Stir it for few minutes.Add cooked rice and mix well.Remove from flame.Serve it hot with raita or pappadams.
