Veg Biryani

Yesterday I made Veg Biryani and raita for lunch.Mostly I make biryani in pressure cooker.Because it is easy and time saving.A good recipe for beginners as it is so simple.I too started with this veg biryani only during the starting days of my cooking.I used to make this biryani all saturdays after I learnt it for my sisters and bro.Then only learnt cooking other biryanis.Serve it with Raita and some veg fries.It will be really delicious.Usually I don’t use any biryani masalas.I make it with the masala powders available at home and make a delicious,tasty,aromatic Veg biryani at home.Definitely try this recipe.

Cooking Time : 30 mins
Serves : 3 to 4 persons


Basmati Rice – 1 and 1/2 cup

Ghee – 4 tbsp
Bay leaves – 2
Cardamon – 3
Cloves – 5
Cinnamon stick – 2 (1 inch piece)
Cumin seeds – 1/4 tsp
Fennel seeds – 1/4 tsp
Cashew nuts – 10
Raisins – 10
Onions – 2 (finely sliced)
Green chilli –  3
Mint leaves – 1 cup
Coriander leaves – 1 cup
Ginger garlic paste – 2  and 1/2 tsp
Carrot – 1/2 cup (chopped into bite size)
Beans – 1/2 cup (chopped into bite size)
Potato – 1/2 cup (chopped into bite size)
Cauliflower florets – 1/2 cup 
Green Peas – 1/3 cup
Soya chunks – 1 cup 
Tomato – 1 (finely chopped)
Curd – 1/4 cup
Lemon juice – 1 tbsp
Turmeric powder – 1/2 tsp
Red chilli powder – 1 and 1/2 tsp
Coriander powder – 2 tsp
Fennel powder – 1/4 tsp
Garam masala – 1/4 tsp
Salt to taste


1.Clean basmati rice and soak it in water for about 30 mins.Clean the vegetable and chop them.Squeeze lemon and take juice.

2.Take a pressure cooker and heat ghee in it.Add Bay leaves,cardamon,cinnamon,cloves,cumin seeds,fennel seeds and saute till they begin to sizzle.Add Cashew nuts and Raisins let them turn light golden.
3.Add sliced onions.Saute it to Light golden.Add green chillies.
4.Add ginger garlic paste.Saute till the raw smell of it goes.Add coriander and mint leaves.Save few coriander and mint leaves to add at last.
5.Add all the veggies ,soya chunks.Mix well.Finally add chopped tomatoes.
6.Add salt to your taste,turmeric powder,red chilli powder,coriander powder,fennel powder,garam  masala and mix it well with the veggies.
7.Add thick curd,lemon juice.Drain the soaked basmati rice and add it.The curd I used was not sour.If you use sour curd.avoid lemon juice.

8.Mix the rice well with the masalas and add 2 and 1/2 cups of water.Check for should be bit salty.Add mint and coriander leaves.
9.Allow it to boil.When it starts boiling.Close with the lid with whistle in it.Put the flame to simmer and cook for 10 minutes.After 10 minutes put off the flame.Let the pressure get released by itself and after that open it.Serve it hot with Raita.
