A spicy version of Beetroot fry that goes well with Sambar or Dal. The sweetness from beetroot and spiciness from red chilli powder together gives an awesome taste to the dish.Beetroot is a good source of Iron and folate. During pregnancy it is good to take beetroot as It increases hemoglobin level.Here is the recipe for Beetroot fry.
Preparation Time : 15 mins
Cooking Time : 30 mins
Serves : 2 -3 persons
Beetroot – 2 (Big sized)
Turmeric powder – 1/4 tsp
Red chilli powder – 1 and 1/2 tsp
Salt to taste
Coconut oil – 1 tbsp
Mustard seeds – 1/4 tsp
Urad dal – 1 tsp
Curry leaves – 2 sprig
1.Wash and peel the skin of beetroot and chop them into small pieces.To a pan add 1 tbsp of oil.Then add mustard seeds let them crackle then add urad dal,Curry leaves.
2.Then add chopped beetroot and saute them well in oil to get them cooked.Add required amount of salt,red chilli powder,turmeric powder when they are half cooked.Combine the powder well with the beetroot.Cook till they are fully cooked for about 10 minutes stirring occasionally.
Serve them with Rice and Sambar or any Kuzhambu.
