This is one of my favourite curry made with Bitter gourd.Bitter gourd is fried well and cooked in tamarind extract which reduces the bitterness of it.Then paste of roasted spices and coconut is added to it.It tastes well with Rice and any Veggie stir fry.I usually make it along with Surakkai paruppu kootu or Potato fry and appalam for Lunch.It tastes amazing.Definitely try this food combinations.You will love it for sure as I do.Adjust Spiciness to your taste.I made it spicy.Here is how I made it.

Serves : 3 Persons
INGREDIENTS REQUIRED
Bitter gourd – 1 (150 g)
Tamarind – lemon size
For seasoning
Sesame oil – 3 tsp
Mustard seeds – 1/4 tsp
Fenugreek seeds – 1/4 tsp
Curry leaves – 1 sprig
Asafoetida – 1/8 tsp
Turmeric powder – 1/4 tsp
Salt to taste
For grinding
Peppercorns – 1 tsp
Cumin seeds – 1 tsp
Coriander seeds – 1 and 1/2 tbsp
Dried Red chilli – 6
Grated Coconut – 1/3 Cup
METHOD
1.Wash and cut bitter gourd into round slices.Remove seeds in it.Soak tamarind in 1 cup of water mix up well and extract tamarind juice.
2.To a pan add little oil and fry peppercorns,cumin seeds,coriander seeds and dried red chilli for few minutes till a nice aroma comes out.Finally add grated coconut and roast them for 1- 2 minutes.
3.Allow them to cool down.add them to a mixie jar and blend them into a fine smooth paste by adding water.
4.To a pan add 3 tsp of oil.When it get hot add mustard seeds.Let them crackle.Add fenugreek seeds,Asafoetida powder,curry leaves and chopped bitter gourd.
5.Fry them well in oil.Add turmeric powder,required amount of salt.
6.Add tamarind extract and allow it to boil.Bitter Gourd will cook well in the tamarind juice.When it starts to boil.Add the blended coconut paste.Rinse off the jar with little water and add them to it.cook the oil starts to separate and curry has started thickening.
Serve it with Hot Rice and Pappadums.
