Carrot Rice /Carrot Sadam

Carrot Rice was introduced to me by my friend during college days.I love the carrot rice she brings for lunch.I used to exchange my lunch with hers if she brought carrot rice.I also ask my amma to make it for lunch along with brinjal fry.It is my favourite combo.It is a best idea for lunch box.Even your kids will love it.I make this rice quite often because now everyone at my home loves it.Lets get into the recipe.

Preparation Time : 15 mins 
Cooking Time : 25 mins
Serves : 2 persons

INGREDIENTS REQUIRED

Carrot – 400 g(finely grated)
Cooked Rice – 2 and 1/2 cup
Salt to taste
Turmeric powder – 1/2 tsp
Red chilli powder – 1 tsp

For Seasoning

Sesame oil – 2 tbsp
Mustard seeds – 1/4 tsp
Cumin seeds – 1/2 tsp
Urad dal – 1 tsp
Chana dal – 1 tbsp
Ground nut – 2c tbsp
Asafoetida – 1/8 tsp
Dried round red chilli – 5 / Dried red chilli long – 2
Onion – 1 (finely chopped)
Green chilli – 2 (finely chopped)
Curry leaves – a sprig
Coriander leaves – a few
Mint leaves – a few 

METHOD

1.Wash carrot peel it and grate it finely.Spread cooked rice in a plate and allow it to cool down.You can also use leftover rice.Chop onion,green chillies and keep all ingredients ready.To a pan add oil and heat it.Add mustard seeds,cumin seeds.Add chana dal.

2.Saute till they turn golden.Then add urad dal let them turn golden.Then add ground nut and dried red chilli.

3.Add chopped onions,green chillies,Curry leaves,mint leaves and coriander leaves.Add asafoetida to it.

4.Add required amount of salt to it.then add turmeric powder,Red chilli powder and mix well.Then add Grated carrot.

5.Mix carrot well with the masala and allow it to cook.When it is cooked well.Add cooked rice to it and mix well.Serve it hot with Raita.
