Kathirikai Murungakkai puli Kuzhambu / Brinjal Drumstick puli Kuzhambu is a South Indian traditional curry made with Brinjal and Drumstick.It is a tangy spicy curry made with coconut sambar powder paste and tamarind extract.It goes well with Rice accompanied by Appalam and any Veggie stir fry.Puli kuzhambu always has a place in my weekly meal plan.Brinjal and Drumstick makes a good combination together.Try out this simple recipe for lunch and comment how it came out.
Preparation Time : 10 mins
Cooking Time : 20 mins
Serves : 2-3 Persons
Brinjal – 200 g(cut into 4 pieces lengthwise)
Drumstick – 2(cut into finger size)
Tamarind – a lemon size
Salt to taste
Oil – 3 tsp
Mustard seeds – 1/4 tsp
Fenugreek seeds – 1/4 tsp
Small onions – 5
Garlic – 5 pods
Curry leaves – 1 sprig
Grated coconut – 1/2 cup
Sambar powder – 1 tbsp
Turmeric powder – 1/4 tsp
1.Soak tamarind in 1 cup of water and extract tamarind juice discard the pulp.To a mixie jar add Grated coconut,Turmeric powder and Sambar powder and blend them into a fine smooth paste by adding sufficient amount of water.
2.To a pan add oil.To the hot oil add mustard seeds,Fenugreek seeds and let them crackle.Then add Small onions and garlic.Saute them well in oil.
3.Add curry leaves.Saute small onions and garlic to nice golden.Add chopped brinjal and drumstick.
4.Saute brinjal and Drumstick well in oil.Add required amount of salt.Add extracted tamarind juice
along with 1 cup of water.
5.Allow it to boil.Add coconut sambar powder paste and mix well.Again bring the curry to boil.Put off the flame.Serve it hot with Rice.
