Kodo millet Curd Rice / Varagu thayir Sadam

Millets are a healthy alternative to Rice.You can try it at least once in a week instead of Rice.These millets are gluten free.They have high protein content.They are good for diabetes.Kodo millet curd rice tastes awesome like the typical curd rice and you can’t find any difference.Just try it once and you will regularly make this for sure.Here’s how I made it.

Preparation Time : 20 mins
Cooking Time : 15 mins
Serves : 2 persons

INGREDIENTS REQUIRED

Kodo millet / Varagu – 1 cup

Salt to taste
Water – 2 cup
Milk – 1 cup
Thick Curd – 1 cup
Carrot – 1 (grated)

For Tempering

Oil – 2 tsp
Mustard seeds – 1/4 tsp
Green chillies – 2(finely chopped)
Chopped Ginger – 1 tbsp
Curry leaves – 2 sprig

METHOD

1.Rinse kodo millet in water and Soak it in sufficient amount of water for 15 minutes.

2.Add soaked and drained millet in a pressure cooker along with 2 cups of water and required amount of salt for 2 whistles.

3.Mash cooked millet well.Nicely mashed curd rice tastes great.Mash as much as possible.when it is hot add milk and mix well.Allow it to cool down.

4.After it cools down add thick curd and mix well.Add grated carrot to it and mix them well with curd and millet.

5.In a pan add oil and temper it with mustard seeds,green chillies,chopped ginger and curry leaves .I used sesame oil.Add this tempering to mixed curd millet and mix again.
I had it with fried buttermilk chillies and mango pickle.Simple but tasty and healthy meal.
