Paneer Pulao

Paneer Pulao a quick and easy recipe.It is so simple to make.It requires only some ingredients but ends with a delicious and aromatic pulao.You can have it with Raita or a spicy side dish.It is a one pot meal.I made it in pressure cooker.Here is how I made it.
Preparation Time : 10 mins
Cooking Time : 25 mins
Serves : 2 Persons

INGREDIENTS REQUIRED

Paneer – 200 g
Rice – 1 cup
Onion – 1 (big sized finely sliced)
Green chilli – 3
Mint leaves – 1/4 cup
Coriander leaves – 1/4 cup
Ginger garlic paste – 1 tsp
Salt to taste

For seasoning

Ghee – 1 tbsp
Bayleaves – 1
Cinnamon – 1 (1 inch stick)
Cardamon – 3 
Cloves – 3 
Cumin seeds – 1/4 tsp
Fennel seeds – 1/4 tsp

METHOD

1.Rinse rice with water and soak it in sufficient amount of water for 30 minutes.
2.To a pressure cooker add ghee,bay leaves,cinnamon stick,cloves,cardamon,cumin seeds,fennel seeds.Add sliced onions and saute them to nice golden color.

3.Add green chillies,ginger garlic paste,mint  and coriander leaves.saute them well till the onions become golden brown.
4.Add Paneer cubes and saute them with the onions.Add required amount of salt,drained rice and mix well.
5.Add 1 and 1/2 cup of water.Check for salt.Allow it to boil.Then close the cooker with lid and whistle in it.Cook for 10 mins in low flame.Open the lid after the pressure has released.
Serve it hot with Raita.
