Senai Kizhangu Fry / Elephant foot Yam fry

Senai Kizhangu is known as Elephant yam /Elephant foot yam in english.Senai Kizhangu fry is a south indian fry that tastes good with Rice and Sambar/Dal,Rice and Rasam and also Variety Rices.Yam are good source of Vitamin B6.Try this simple,tasty recipe for your lunch.

Preparation Time : 10  mins
Cooking Time : 30 mins
Serves : 3 Persons

INGREDIENTS REQUIRED

Elephant foot Yam / Senai Kizhangu – 500 g
Salt to taste
Mustard seeds – 1/4 tsp
Turmeric powder – 1/2 tsp
Red Chilli powder – 2 tsp
Curry leaves – 2 sprig
Oil as required

METHOD

1.Peel off the skin of yam and cut them into small pieces.Use gloves because these yams makes itchiness.Wash them in water.

2.To a pot add chopped yam,salt and turmeric powder.Add 1 cup of water and cook it till they are half done for about 15 mins.Drain excess water and keep them aside.
3.To a pan add mustard seeds allow them to crackle then add curry leaves,cooked and drained yam.Fry them well in oil for few minutes.
4.Then add red chilli powder and combine them well with yam.Fry them well till they completely cooked and turned nice golden crisp.
