I am a Pickle Lover.Especially this mango pickle is my favorite.I ask Mom to prepare this pickle often whenever we get nice raw mangoes and it gets over on that day itself .It tastes yummy with Rice and Sambar,Curd Rice,Lemon rice.Similarly Today also we finished this bowl of mango pickle because it tastes really awesome and tasty.If you are a pickle lover like me.You will eat it simply like that.It is a simple and instant Pickle recipe.Try it out.
Preparation Time : 10 mins
Cooking Time : 10 mins
Unripe Mango – 200 g
Red Chilli powder – 1 tsp
Salt – to taste
Asafoetida – a generous pinch
Fenugreek seeds – 1/4 tsp
Gingelly Oil – 3 tbsp
Mustard seeds – 1/2 tsp
Curry leaves – 2 sprig
1.Wash and wipe raw mangoes and cut them into small pieces.Take the mango pieces in a mixing bowl.
2.Dry Roast the fenugreek seeds and crush them into fine powder with the pestle.
3.To the cut mango pieces add red chilli powder,required amount of salt,asafoetida and roasted fenugreek seed powder.
4.Heat oil in a pan.Add Mustard seeds let them crackle.Then add curry leaves and fry them well.Add this tempering to the mango pieces and Mix well.
Mango Pickle is Ready.
Transfer them to a glass jar.Refrigerate and use them.
