This recipe was shared by my sis.This curry is quite common along vegetarian meal served during marriage function and in hotel.Elephant yam is boiled,fried and then added to onion tomato gravy.It tastes great with Dal,Sambar. Boiling it helps to reduce the itchiness. Lets see how to make it.

Serves : 3 Persons
Turmeric powder – 1/2 tsp
Salt – 1/2 tsp
Mustard – 1/2 tsp
Urad dal – 1 tsp
Onion – 2 medium sized (finely sliced)
Ginger garlic paste – 1 tsp
Tomato – 1 medium sized (chopped)
Red chilli powder – 2 tsp
Coriander powder – 1 tsp
Fennel powder – 1/2 tsp
Pepper powder – 1/2 tsp
Salt to taste
Grated coconut – 2 tbsp(optional)
Oil for frying
1.Chop elephant yam into thin pieces.Add them to a pot along with turmeric powder,salt and sufficient amount of water.Place them on flame and cook till they are half done.When they are half cooked drain the excess water and keep them aside.
2.Heat oil for frying in a kadai and deep fry them.Remove them when they are fried.
3.To a pan add 1 tbsp of oil.Add mustard seeds and urad seeds.Add sliced Onions,curry leaves.Saute the onions till they turn translucent.Add ginger garlic paste and saute them till the raw smell goes.
4.Add green chilli slits.Add chopped tomatoes and saute well.Add red chilli powder,coriander powder,fennel powder,pepper powder and salt to taste.Give them a nice mix.
5.Add little water for the masalas to get mixed well with the onions and tomatoes.Add fried yam to it and mix well.Finally add grated coconut if you are adding it.
Serve it hot with Rice.
