Beetroot chops – பீட்ரூட் சாப்ஸ்

Today I have come with a recipe made with beetroot.In this recipe boiled beetroot is sauteed with a masala made with fried onions and spices.It goes well with Sambar,dal and Curd Rice.Beetroots are good source of iron,manganese,potassium and magnesium.It helps to lower blood pressure.

Cooking Time : 25 mins
Serves : 3 – 4 Persons

INGREDIENTS REQUIRED

Beetroot – 2 (boiled and chopped into cubes)
Oil – 3 tsp
Mustard seeds – 1/2 tsp
Cumin seeds – 1 tsp
Bay leaves – 1
Turmeric powder – 1/4 tsp
Red chilli powder – 1 tsp
Salt to taste

For making ground masala

Oil – 2 tsp
Onion -1 big sized(chopped)
Cinnamon -1(1 inch piece)
Cloves – 2
Garlic – 4 pods
Green chilli – 2
Ginger – 1 inch piece
Peppercorns – 6

METHOD

1.Boil beetroot.Peel off the skin,cut them into cubes and keep them aside.To a pan heat about 2 tsp oil and then add cinnamon,cloves,pepper.Let them sizzle.Then add chopped onions,garlic,ginger and green chillies. Fry them well in oil for few minutes till they turn light golden.Then remove from flame.
2.Allow the fried ingredients to cool down.then add them to a grinding jar and grind them to a fine smooth paste.
3.To the same pan add about 3 tsp of oil.Add mustard seeds let them crackle then add cumin seeds,bay leaves.Add the ground onion masala paste.Rinse off the grinding jar with little water and add it to the pot.Add turmeric powder,chilli powder and required amount of salt.
4.Add the boiled and chopped beetroot pieces.Mix it well with the onion paste.Close it with a lid and cook for few more minutes until the beetroot pieces is coated well with the masala. Finally add coriander leaves.
Serve it with hot Rice.
