Drumstick leaves Stir Fry – முருங்கைக்கீரை பொரியல்(Murungai keerai poriyal)

Drumstick or Moringa are quiet common in South Indian recipes.Drumsticks are mostly used in Curries,sambar,gravies.They have higher nutritive value. Similarly Drumstick leaves can be used to make curry,stir fry.They are rich sources of vitamins and proteins.They regulate blood pressure.Drumstick leaves enriches hemoglobin levels.It is so good to add drumstick leaves in our meal.At home mom used to make this stir fry often during holidays.It tastes so yummy with Rice.We had 2 drumstick tree in our backyard.So we could get fresh drumstick leaves always.Preparing drumstick leaves is quiet time consuming but it is worthful one.Whenever Mom asks to help me with it sometimes I used to help her,sometimes I used to run away.But now I have to make it myself because I have no other go.My Husband and daughter me with removing leaves from the stalks.I am making it and eating it after years because I couldn’t find them in supermarkets here.Recently I got them and a bunch of leaves cost around 85 Indian rupees here.Now lets see how to make this simple and aromatic Drumstick Stir fry.It goes well with Rice and any Kuzhambu Varieties.Even you can mix this stir fry with steamed rice and eat it just like that.

Preparation Time : 20 mins
Cooking Time : 10 mins
Serves : 2 -3

INGREDIENTS REQUIRED

Oil – 1 tbsp
Mustard seeds – 1/4 tsp
Cumin seeds – 1/2 tsp
Onion – 1 (sliced)
Dried red chilli – 3
Drumstick leaves – 4 cup
Grated coconut – 1/2 cup

METHOD

1.Remove drumstick leaves from the stalks.Wash,drain and keep them aside.Heat oil in a pan.Temper it with mustard seeds,cumin seeds.Add sliced onion and saute till transparent.Add dried red chilli. 
2.Then add drumstick leaves.It will reduce in volume as it is cooking.The drumstick leaves will leave water and it will help it to cook.Add required amount of salt.Saute in medium flame until all the moisture has escaped and it is completely dry.Finally add grated coconut and saute for a minute and then remove from flame.
Serve hot with Rice.
