I am very great fan of my mom’s Idi Sambar. It tastes amazing with Idli,Dosa. It also goes well with Rice.This sambar is made with fresh homemade sambar powder which gives a aromatic and superb taste to it.This is my grandma’s Recipe and It is followed by my mom and me.It is a sambar recipe quite famous in Tirunelveli. Here is how to make it.

Serves : 3 Persons
For making Dal
Toor dal – 1/2 cup
Tamarind – a small gooseberry size
Small onion – 4
Garlic – 2 pods
Green chillies – 2
Turmeric powder – 1/2 tsp
Carrot – 1 (cut into thick rounds)
Beans – 5 (cut into 1 inch piece)
Drumstick – 1(cut into finger size piece)
Potato – 1 (cut into cubes)
Brinjal – 2 (each cut into 8 pieces)
Salt to taste
For Making Sambar Powder
Gingelly Oil – 2 tsp
Channa dal – 1 tbsp
Coriander seeds – 1 tbsp
Dried Red chilli – 5
Garlic – 2 pods
Asafoetida – 1/8 tsp
Cumin seeds – 1 tsp
Rice – 1/2 tsp
Fenugreek seeds – 1/4 tsp
Pepper corns – 15
Gingelly Oil – 1 tbsp
Mustard seeds – 1/2 tsp
Small onions /Shallots – 4 (sliced)
Curry leaves – 2 sprig
Dried Red chilli – 2
1.Soak Tamarind in 1 cup of water and Extract juice.Discard the pulp.
2.Rinse and Soak toor dal in sufficient amount of water.Drain the water and add the toor dal to a pressure cooker.Add small onions,garlic,turmeric powder and green chillies to it.Add 1 cup of water and pressure cook for 3-4 whistles.Release the pressure with a ladle.Mash the dal with a spoon or masher Now the dal for sambar is ready.
3.Dry Roast channa dal,coriander seeds,Dried Red chilli,cumin seeds,Pepper corns,Rice,and fenugreek seeds separately one by one and keep them aside.
4.Heat 2 tsp of oil in a pan.Add Garlic,asafoetida and the dry roasted ingredients.Fry them in oil for a minute.
5.Add this roasted ingredients to a grinding jar and grind them to a fine powder.
6.Boil Vegetables in a Kadai with about 1 and 1/2 cups of water and salt.When the vegetable have become soft add tamarind extract to it and allow it to boil.
7.Add Prepared sambar powder to it and mix well.Add cooked toor dal to it.Allow it to cook for few minutes.Check for salt and sourness.Add salt and tamarind extract accordingly if required.
8.In a tadka pan heat oil.Add mustard seeds let them crackle.Add Sliced small onions.Fry them well when they turn translucent add Dried red chilli and curry leaves.
Add this tempering to the Sambar.
