கத்தரிக்காய் பலாக்கொட்டை கூட்டு- Brinjal(Eggplant) Jackfruit seed curry

Brinjal is one of the vegetable that takes place always in our vegetable list.You can find it always in my refrigerator.We can make a variety of dishes with it.I have posted many recipes with in my blog.If I want a quick side dish for my lunch I usually go for brinjal fry.Like wise I love brinjal sambar and brinjal puli kuzhambu.I love dry fish brinjal curry which mom makes.Will post its recipe soon.I used to see various types of brinjal available in market.But I usually purchase the small purple color brinjal bcoz I feel it is more tasty and cute than others.I also like the big fat purple eggplant it too looks so cute and colorful.I use them mostly for chutney.Coming to jackfruit seeds they are tasty as the fruit and can be used to make variety of dishes like brinjal.This recipe is a sour and mild spicy curry made with brinjal and jackfruit seed.

Cooking Time : 30 mins
Serves : 2 – 3 Persons

INGREDIENTS REQUIRED


For making Curry

Coconut oil – 1 tbsp
Brinjal – 5
Dried Jack fruit seeds – 15 to 20 nos
Tamarind – a small gooseberry size
Turmeric powder – 1/4 tsp
Sambar powder – 1 tsp
Salt to taste

For Tempering

Oil – 3 tsp
Mustard seeds – 1/2 tsp
Urad dal – 1 tsp
Curry leaves – 2 sprigs
Dried red chilli – 2
Asafoetida – 1/8 tsp

For Grinding

Channa dal – 1 tsp
Coriander seeds – 1 tsp
Dried red chilli – 1
Grated Coconut – 1/8 cup 

METHOD

1.Soak tamarind in 1 cup of water.Extract juice and discard the pulp.
2.Dry roast channa dal,coriander seeds,dried red chilli for few minutes in a pan.Switch off the flame.Transfer it to a plate.To the same pan add grated coconut and roast it in the heat itself.Allow them to cool.Grind these roasted ingredients to a coarse powder.
3.Pressure cook jack fruit seeds in cooker for 1 to 2 whistles.Peel off the skin.chop each seed into two pieces.
4.chop brinjal into slices.Cook them in sufficient amount of water till they are half cooked.Drain the excess water and keep them aside.
5.Heat oil in a pan.Add mustard seeds.Let them crackle.Add urad dal,dried red chilli,curry leaves,asafoetida.Add tamarind extract.Allow it to boil.
6.Then add turmeric powder,sambar powder,required amount of salt.
7.Add cooked jack fruit seeds,brinjal and cook till the brinjal is full done and curry has become thick.Then add the ground powder.Mix them all together.Remove from flame.
