வெந்தய குழம்பு(Vendhaya Kulambu)-Fenugreek seeds coconut curry

Vendhaya Kuzhambu – a Tamilnadu style curry made with roasted fenugreek and coconut paste and served along with Rice.Fenugreek seed is called as Vendhayam in Tamil.This curry has bitterness,sourness,spiciness and sweetness in it.It is a most common curry made for lunch in most of the houses.Fenugreek has numerous health benefits.It reduces the body heat.It is a good cure for stomach problems.It also gives a nice aroma to the dish.I usually make this curry for lunch along with Poriyal or Kootu and Appalam(Pappadams)/Vadagams.

Cooking Time : 20 mins
Serves : 3 Persons

INGREDIENTS REQUIRED

For Grinding

Fenugreek – 1 tsp
Grated Coconut – 1/4 cup
For Tempering
Oil – 1 tbsp
Mustard seeds – 1/2 tsp
Fenugreek – 1/4 tsp
Small onions/Shallots – 3/4 cup(chopped)
Curry leaves – 1 sprig

For Seasoning

Asafoetida – 1/8 tsp
Salt to taste
Turmeric powder – 1/4 tsp
Red chilli powder – 1 and 1/2 tsp
Coriander powder – 2 tsp
Tamarind – a small lemon size
Jaggery – a small piece (optional)

METHOD

1.Soak Tamarind in 1 cup of water.Squeeze the juice out of it and discard the pulp.
2.Dry roast 1 tsp of fenugreek for a minute until it starts to crackle and turn golden.Allow it to cool down,add it to a grinding jar along with grated coconut.Blend it into a smooth paste adding water.
3.To a kadai add oil.Heat it.Then add mustard seeds.Allow it to crackle.Now add 1/4 tsp fenugreek seeds.Add chopped small onions.Saute them well.
4.Add curry leaves,Asafoetida,salt to taste.Cook till the small onions turns translucent.
5.Add turmeric powder,Red chilli powder and coriander powder.Mix well with the small onions.Add tamarind extract to it.Add the ground coconut paste.Rinse the jar with water and add it to the curry.Mix well.Add jaggery if you like little sweetness in your curry.Check for sourness and salt .Add tamarind extract and salt accordingly.Bring it to boil.Switch off the flame.
Serve with Rice.
