It has been a long since I posted a non veg Recipe.So Today I have come with a mutton recipe made with Roasted coconut and Spices.Definitely It will taste different from the usual mutton curries we make because of the roasting and grinding done.Try this recipe for a change.It will taste lovely with Appam,Idiyappam and even Rice.Here is how to make the mutton curry.

Serves : 5 Persons
INGREDIENTS REQUIRED
For Roasting and Grinding
Oil – 1 tsp
Coriander seeds – 1 tbsp
Dried Red chilli – 5
Cloves – 2
Cinnamon stick – 1(1/2 inch piece)
Fennel seeds – 1/2 tsp
Peppercorns – 1/2 tsp
Small onion – 4
Grated coconut – 1 cup
Curry leaves – 1 sprig
For cooking mutton
Oil – 2 tsp
Mutton – 1/2 kg
Onion – 1(big sized)
Tomato – 1
Ginger garlic paste – 1/2 tbsp
Kashmiri Red chilli – 1 tsp(optional)
Salt to taste
For Tempering
Oil -1 tbsp
Small onions/Shallots – 5(sliced) or Onion – 1/2(sliced)
Curry leaves – 1 sprig
METHOD
1.In a kadai add oil and roast coriander seeds,Dried red chilli,curry leaves,cinnamon,cloves,fennel seeds,peppercorns,small onions for 5 minutes.Finally add grated coconut and fry them till they turn golden brown.Remove from flame.Keep them aside.Allow them to cool down.
2.Then add them to a grinding jar and ground them into a fine smooth paste by adding water.
3.Wash Mutton.Slice the onions.Chop tomatoes into small pieces.To a pressure cooker add oil and saute till they turn translucent.Add salt,ginger garlic paste.Saute till the raw smell of Ginger garlic paste goes.
4.You can add Kashmiri chilli powder.Its optional.It gives a nice color to the dish.Mix well with the onions.Add chopped tomatoes.Cook till they get soft,add little water( about 1 – 2 tbsp)so that the masala does not get burnt.Add in the cleaned mutton pieces.Mix well with the masala.
5.Add 1 cup of water and allow them to cook till the mutton gets soft.Open the lid after the pressure has released and add the ground coconut masala into it and cook for about 10 minutes.
6.To a pan add 1 tbsp of oil and fry the sliced shallots or sliced Onions and curry leaves till the onions turn golden.Add this tempering to the curry.
Serve this curry with Rice,Pulao,Appam,Chapathi……
