Bittergourd Roast – பாகற்காய் வறுவல்(Pagarkai varuval)

Do you love Bitter gourd?Do you hate it for its bitterness?Try this recipe you will definitely love bitter gourd from then.And you will keep on making this dish whenever you buy them.It goes well with Rice and Sambar/dal/any Kuzhambu,Variety Rice.You can also try my other bitter gourd recipes.

Cooking Time : 20 mins
Serves : 2 to 3 Persons

INGREDIENTS REQUIRED

Bitter gourd – 2
Oil for frying
Gram flour – 1 and 1/2 tbsp
Rice flour – 1 tbsp
Turmeric powder – 1/2 tsp
Red chilli powder – 1 tsp
Kashmiri Red chilli powder – 1 tsp
Salt to taste

METHOD

1.Wash and cut bitter gourd into thin slices.Remove the seeds in them.
2.Soak tamarind in 1 tbsp of water and extract juice.To the tamarind juice add Gram flour,Rice flour,Turmeric powder,Red chilli powder,Kashmiri chilli powder.Mix well together and make a paste.
3.To the sliced bitter gourds add required amount of salt.Mix well.Then marinate the bitter gourd slices with the masala paste.Allow it to marinate for 10 mins.
4.Heat oil for frying.Fry the marinated slices in batches till they turn golden and crispy.
Serve this hot,crispy bitter gourd roast with Rice.
