Carrot Beans Stir fry – கேரட் பீன்ஸ் பொரியல்

A simple, easy yet healthy and tasty stir fry – a south Indian style poriyal made with Carrot and beans. Goes well with any kuzhambu, dal or sambar variety. The green and orange colour of the veggies together make the dish so appealing. Let see how to make this stir fry.

Preparation Time : 15 mins
Cooking Time : 20 mins
Serves : 2 to 3 Persons

INGREDIENTS REQUIRED

Coconut oil – 1 tbsp
Mustard seeds – 1/2 tsp
Cumin seeds – 1/2 tsp
Urad dal – 1 tsp
Onion – 1 (sliced)
Curry leaves – 1 sprig
Dried Red chilli – 2
Green chilli – 3(chopped)
Asafoetida – a pinch
Carrot – 150g (peeled and chopped into small pieces)
Beans – 150g (chopped into small pieces)
Grated Coconut – 1/2 cup
Salt to taste

METHOD

1. Wash the veggies. Chop both the tips of beans and chop them into small pieces. Peel off the skin of carrot and chop them to small pieces. Heat oil in a pan. Add mustard seeds. Let them crackle. Add urad dal. Let it turn light golden. Add cumin seeds, Sliced Onions. Saute them well in oil. Break the dried red chillies and add them.
2. Add chopped green chillies, curry leaves, chopped carrot and beans. Saute them well in oil. Add asafoetida, required amount of salt. Sprinkle some water as required for the veggies to cook. Once they are cooked. Add grated coconut to them. Fry them for few more minutes. Remove from flame. Serve with Rice.
