Chicken Fried Rice – சிக்கன் பிரைட் ரைஸ்

You would find this Dish in mostly in all South Indian hotel menu. If I go to a hotel for Lunch. I usually prefer for Veg/Non-Veg meals, next might be biryani/fried Rice. I hope this may apply to all South Indians. For dinner, it would be my first choice. My first cooking of fried rice was for my sis. She loves chicken fried rice a lot. I have made them with a normal ponni rice which is left after lunch. But when I tried it in the hotel I found out that Basmati Rice makes fried rice tastes better. Then adapted it in my recipe. Fried rice has occupied a prominent place in South Indian cuisine. Nowadays you can find many street side shops selling Fried Rice, Fried noodles. I usually have it along with chilli chicken. My daughter too loves it a lot. Now lets how to make it.
Preparation Time : 20 mins
Cooking Time : 30 mins
Serves : 3 Persons


Butter – 1 tbsp
Garlic sliced – 1/8 cup
Onion – 1(medium sized,chopped into small pieces)
Beans – 1/2 cup(chopped)
Carrot – 1/2 cup(chopped)
Cabbage – 1/2 cup(chopped)
Capsicum – 1 (chopped)
Spring onions(green part) – 1/2 cup
Soy sauce – 1 tsp
Pepper powder – 1 tsp(adjust to your taste)

For Frying Chicken

Chicken (Boneless) – 250 g
Soy sauce – 1 tsp
Salt to taste
Pepper powder – 1 tsp

For making scrambled eggs

Oil – 2 tbsp
Egg – 2
Salt – 1/8 tsp

For preparing Rice

Water as required ( 1 litre)
Basmati Rice – 1 cup
Salt – 1/2 tsp
Lemon – 1/2


1. Wash and clean the chicken pieces. Cut them into small cubes. Marinate them with Soy sauce, pepper powder and salt for about 20 minutes.
2. Wash and Soak Basmati Rice in water for about 20 mins. Then Drain the water and Keep the Rice. To a pot add water required for boiling the rice. Add 1/2 tsp of salt. Bring water to a nice boil. Add the soaked and drained Basmati Rice. Add a few drops of oil. Squeeze the half lemon into it. It will take about 6-7 minutes to get 90 % cooked. Pour them into a strainer and Drain the water. Spread this drained Rice in a plate or tray and Allow it to cool down.
3. Break eggs into a bowl. Add salt and Beat the eggs well. Heat 1 tbsp of oil in a kadai and add the beaten eggs. Fry them in medium flame. After a few minutes scramble them and Remove them from the kadai and keep them aside.
4.Heat oil in a kadai for frying chicken. Add the marinated chicken pieces and fry them to golden and remove them to a bowl.
5.To a Big Kadai/Wok. Add butter/oil. When the butter has melted down. Add sliced garlic, chopped onions. Saute them well until they turn translucent. Add chopped beans, carrot and cabbage. Fry them well. Add a little salt.
6. Add chopped capsicum. Fry them. Keep the veggie cooked and crunchy. Add the scrambled eggs, fried chicken pieces,1 tsp soy sauce. Now Add the cooked Rice. Mix them well. Finally, add the chopped Spring Onions. Check for salt and add if required.
Serve hot with your favorite chinese side dish.
