Cluster Beans Thoran – Cluster Beans stir fry with Coconut – கொத்தவரங்காய் பொரியல்

Cluster beans also are known as Kothavarangai in Tamil. It can be used to make thoran, sambar and used along with other veggies in aviyal. Cluster bean is one vegetable which is excellent in controlling blood sugar levels. Let’s see how to make this stir-fry.

Serves : 3 Persons

INGREDIENTS REQUIRED

For cooking cluster beans

 
 
Cluster Beans – 250g ( chopped finely into small pieces)
Turmeric powder – 1/4 tsp
Salt to taste
Water – 1 cup

For Grinding

Grated Coconut – 1/2 cup

Garlic – 3 pods
Small onions / Shallots – 4
Green chilli – 2
Dried Red chilli – 1
Cumin seeds – 1 tsp

For Tempering

Oil – 2 tsp

Mustard seeds – 1/2 tsp
Urad dal – 1 tsp
Small onions / Shallots – 1/3 cup (finely sliced)
Asafoetida – a pinch
Curry leaves – a sprig

METHOD

1. Wash well the cluster beans. Trim both the ends of the cluster beans and cut them into small pieces.

2. To a pan add the cut cluster beans along with turmeric powder and salt. Add water. Switch on the flame and cook till they become soft. Remove them to a bowl. if there is some excess water drain them out.3.To the grinding jar add all the ingredients given for grinding and grind them to a coarse paste without adding water.4. Now to a pan, Add oil. Once it gets hot. Drop in the mustard seeds. Let them crackle. Then add urad dal, curry leaves, Asafoetida. Let the urad dal get golden. Add sliced shallots to it. Saute them till the shallots turn translucent. Then add the ground coconut paste. Saute them well till the raw smell goes. Add the cooked cluster beans and mix them all together. Add salt if required. Cook for few more minutes. Then remove from flame.
