Spicy Baby Potato Fry

These fried Baby Potatoes are spicy, soft inside and have a good flavour in it. Making them a quick and perfect side dish for our lunch. You can also have it with chapati or Roti. These baby potatoes are coated well with the masala and make the potatoes taste yummy. Goes well with all Variety Rice. I used Store bought sambar powder for this. Sambar powder gives a nice flavour to this dish. You can also look at my other recipe with Baby Potato.

Cooking Time : 20 mins
Serves : 2 Persons

INGREDIENTS REQUIRED

Baby Potato – 17 nos

For Tempering 

Oil – 1 Tbsp
Mustard seeds – 1/2 tsp
Small onions/Shallots – 1/2 cup(roughly sliced)
Curry leaves – 1 sprig

For Seasoning

Sambar Powder – 1 tbsp
Kashmiri Red Chilli Powder – 1 tsp
Salt to taste

METHOD

1. Wash and take the baby potatoes. Add them to a pressure cooker and cook for about 2 Whistles. I have made small cuts in the potato before cooking. It will help to remove the skin easily after cooking it. Peel off the skin from it and keep them aside.
2.Heat oil in a Pan/Kadai. Then add mustard seeds.Once they start to crackle, add the sliced small onions/shallots. Saute them well in oil. When they turn light golden add the curry leaves and cooked Baby potatoes. Saute them all well together.
3. Add Kashmiri Chilli powder, Sambar powder. Drizzle some oil so the potatoes get coated well with the masala and get fried outside. Add salt as required.
Serve hot with Rice or Roti.
