Hi. How are you all? Since I have some network issues couldn’t make post regularly. I am sure these problems will be sorted out within a week. I have promised myself from then on will post regularly. Today my Lunch was a simple and a usual South Indian menu. I had White Rice, Poondu (garlic)Kuzhambu, Brinjal masala fry, curd, Papad and lemon pickle. I love this fry a lot and this fry regularly made at my home bcoz it pairs well with every veg curries and variety rice. Check out my other recipes made with brinjals
Here is the recipe for my favourite brinjal fry.
Preparation Time: 10 mins
Cooking Time: 20 mins
Serves : 3 Persons
Brinjal – 12 nos
Oil – 3 tsp
Mustard seeds – 1/2 tsp
Urad dal – 1 tsp
Curry leaves – 1 sprig
Dried red chilli – 4 nos
Turmeric powder – 1/4 tsp
Kashmiri Red chilli powder – 1/2 tbsp
Coriander powder – 1 tsp
Asafoetida – a pinch
Salt to taste
1. Wash brinjals. Chop off the green stalk. Cut them into half. Then slice them into thin slices. Put them into the water as soon as you cut them as they may get black.
2.Heat oil in a Kadai. Then add mustard seeds. After they crackle. Add urad dal, dried red chilli, curry leaves, Asafoetida.
3. Add the sliced brinjal pieces. Saute them well in oil. When they are about half cooked. Add Turmeric powder, Coriander powder, Kashmiri Red chilli powder. Saute them well for few more minutes.
Serve it with Rice.
