Spicy Mushroom Roast-காளான் ரோஸ்ட்(Kalan Roast)-How to make Mushroom roast

Mushroom has now a days become one of my favorite veggie. I never forget to pick a box of mushroom whenever I go for grocery Shopping .I either cook gravy, dry recipe or Biryani, Pulao recipe with it once in a week most commonly. This recipe is a dry version and I made it along with Lemon Rice last week. Its Spicer yet you can’t resist yourself from having it. It will also eat delicious with Curd rice, Rice and dal or Sambar. You can also have it with Roti, chapati…Give yourself and ur family a try with this version of Spicy mushroom roast the next time you buy Mushroom. Hope u too will love it as we do.
Preparation Time : 10 mins
Cooking Time : 20 mins
Serves : 2 – 3 persons


Mushroom – 200 g
Onion – 1(thinly sliced)
Green chilli – 2 (cut into pieces)
Curry leaves – 2 sprigs
Coriander leaves – a few
Salt to taste

For Tempering

Fennel seeds – 2 pinch
Cumin seeds – 1/4 tsp

Spice powders

Turmeric powder – 1/2 tsp
Kashmiri chilli powder – 3 tsp
Coriander powder – 1 tsp
Pepper powder – 1 tsp
Cumin powder – 1 tsp
Fennel powder – 1/2 tsp


1.Rinse the mushrooms well in water to remove off the dirt from it.Pat Dry them with a towel or paper towel.
2.Heat oil in an iron kadai/pan or non stick pan. When its hot add Fennel seeds and Cumin seeds. Let them sizzle. Then add sliced onions. Saute them well in oil for few minutes. Then add the sliced mushrooms.Mix well. The mushrooms will start leaving water.Cook till the water is completely reduced.
3. Now add the cut green chilli pieces and Curry leaves. Add all the spice powders and salt. Cook for few more minutes until the oil begins to ooze out. Finally, add chopped Coriander leaves.
Serve with Rice, Roti, chapati…
