Milagai bajjis are deep-fried fritters made with a pale green long sized chillies. This is the most common street food in Tamilnadu. You can also find a lot of this milaga bajjis in street food stalls in hilly areas like Kodaikanal, Ooty. So When we go to such places we never come back without having them. Also, these bajjis are quiet common snacks found on Marina beach and in exhibitions. One of the best snack to have with Chai during the winter season
Now lets see how to make this simple and easy Milagai Bajji
Preparation Time : 10 mins
Cooking Time : 20 mins
Makes : 5 bajjis
- Chillies/Bajji chilli – 5
- Gram flour – 1 Cup
- Rice flour – 2 tbsp
- Kashmiri red chilli powder – 1 tsp
- Turmeric powder – 1/4 tsp
- Salt to taste
- Baking soda – 2 pinch
- Oil for frying
1. Wash the chillies. Pat dry them. In a mixing bowl add gram flour, rice flour, salt, turmeric powder, Baking soda. Mix them well with hands. Heat oil for frying in a kadai or deep frying pan. Add 2 tsp of this hot oil to the bowl. Add water little by little and make a thick batter like that of idli batter consistency . If you want to reduce the spiciness you can also make a vertical slit at one side and remove the seeds in it. But we like it to be spicy so I used it fully.
2.Dip the chillies in batter and coat them well with the batter.Drop the chillies in oil and fry them to golden crisp in a medium flame. You can also cut the chillies into halves and fry them.
Serve hot with Coconut Chutney or ketchup. A best combo is chilli bajji,coconut chutney and Tea.
