MIXED VEGETABLE SAMBAR – Sambar – How to make Sambar – சாம்பார்

Sambar is a famous south Indian recipe which is had as a side dish for breakfast or Lunch. It is usually made with dal(lentils)along with vegetables. Traditional sambar is prepared with a lot of vegetables like Drumstick, Brinjal, Beans, Carrots, Lady’s finger, Potato, Cucumber, Pumpkin, Bottle gourd…..As there was a lot of veggies lying in my refrigerator and as I have to finish all the veggies before my vacation Journey. So planned to make this mixed vegetable sambar along with Rice, mango pickle and potato fry. I used toor dal for this sambar. Other dals like moong dal and masoor dal can also be used instead of toor dal.But my personal favourite for this sambar is Toor Dal. Another important ingredient for sambar is small onions/Shallots. They give a unique taste to the sambar. These shallots are the one particularly used for sambar hence they are also called as Sambar Vengayam in tamil. Sambar powder is a spice blend which is gives the aroma and taste to the sambar.

INGREDIENTS REQUIRED

  • Tamarind – small lemon size
  • Salt to taste
  • Sambar powder – 1 to 1.5 tbsp
  • gingelly oil – 2 tsp

For cooking Dal

  • Toor dal – 1/2 Cup
  • Turmeric powder – 1/2 tsp
  • Water as required
  • Green chillies – 3

VEGetables Required

  • Drumstick – 1
  • Beans – 10 nos.
  • Carrot – 1 no.
  • Broad beans – 5 nos.
  • Cluster beans – 5 nos.
  • Brinjal – 2 nos.
  • Chayote – 3/4 Cup
  • Small onions/Shallots – 10 nos

For tempering

  • Gingelly oil – 1.5 tbsp
  • Mustard seeds – 1/2 tsp
  • Fenugreek seeds – a pinch
  • Dried round red chilli – 5 /Dried long red chilli – 2
  • Curry leaves – 2 sprigs
  • Asafoetida – a pinch

MeThod

1.To a pressure cooker add toor dal along with Turmeric powder, green chillies. Add water about 1/2 inch above the level of dal. Pressure cook for 2-3 whistles. Open the lid once the pressure is released. Mash the dal.

2. Clean the vegetables and cut them into pieces. To a pan add few drops of oil. Add all the veggies and small onions. Saute them well in oil. Cover and cook the vegetables for about 5 minutes in low flame. Then add Sambar powder and mix them well.

3. Soak tamarind in 1/2 cup of water and squeeze the pulp. Add tamarind extract to the veggies. Allow the veggies to cook in the tamarind extract until they get soft. Then add the mashed dal to it. Add water as required and allow them to boil. Add coriander leaves to it .you can also add coriander stalks they give a nice flavour to sambar. Check for salt and sourness and add salt and tamarind extract accordingly.

4. Make the tempering with the ingredients given in for tempering and add it to the prepared sambar.

Tasty Sambar is ready

Serve with Rice,Idli or Dosa.
