
Hi all. Mushroom is rich in protein. I used to make them often at my home. This time I wanted to make a different dish with it so I planned to make a Kerala style mushroom stir-fry. I got this recipe from a cookery show on Malayalam tv channel. It is so simple to make and does not require any grinding. This dish pairs well with Rice, Sambar/dal and also with Roti or chapati. Let’s see how to make this mushroom stir- fry.

INGREDIENTS REQUIRED
- Mushroom – 250 g
For Tempering
- Coconut oil – 3
tsp - Mustard seeds – 1/2 tsp
- Dried Red chillies – 2
- Curry leaves – a sprig
For making paste
- Shallots/Small onions – 1/2 Cup (sliced)
- Green chillies – 3
- Grated coconut – 1/2 Cup to 3/4 Cup
- Salt to taste
- Turmeric powder – 1/4 tsp
- Curry leaves – a sprig
METHOD
1. Wash the mushrooms in water. Dry pat them and slice them into pieces. In a pan add little oil and then add the sliced mushrooms to it.saute them it will start to release water. Cook until the water gets completely dried. Then transfer them to a plate.

2. To a plate add chopped chillies, Shallots, grated coconut, turmeric powder and salt. Mix them well with the hand and make a coarse paste of it.

3. To a pan add oil preferably coconut oil. Splutter some mustard seeds then add Dried red chilli and curry leaves. Saute them. Then add the made coconut paste. Saute them well for 2 mins. Then add the cooked mushrooms to it. Saute them well for 2 mins. Mushroom Thoran is ready. Serve hot with Rice or Roti.
