Kombu Barthad (Coorg Recipe) – Mushroom Fry

Hi all. How are you all?Today’s recipe is Kombu Barthad.Its mushroom fry with dried red chillies, Curry leaves, green chillies and coconut vinegar. I got this recipe from a cookery show in tamil . A chef prepared this dish. This dish is a famous dish from coorg. It is so simple to cook and can be served with Rice or Roti. This dish uses coconut vinegar. I got this vinegar from aunty. She bought it from kerala. If you are not having coconut vinegar. you can use coconut milk and plain vinegar instead.

INGREDIENTS REQUIRED

Oil – 1 tbsp (I used coconut oil)

Dried Red chilli – 3(broken into pieces)

Cumin seeds – 1/2 tsp

Onion – 1(big sized, chopped )

Green chillies – 3(slited into halves)

Curry leaves – 2 sprigs

Mushroom(Button Mushroom) – 250g

Garlic paste – 1 tsp

Cumin powder – 1/2 tsp

Pepper powder – 1/2 tsp

Coriander powder – 1/2 tsp

Turmeric powder – 1/4 tsp

Salt to taste

Coconut vinegar – 2 to 3 tsp

METHOD

1.Wash and dry pat the mushrooms. Slice the mushrooms . Heat oil in a pan. Then add Cumin seeds, dried red chilli pieces. Fry them in low flame. Then add the onions.Place in medium flame and Saute the onions till it turn light golden. Add green chillies, Curry leaves . Add the sliced mushrooms. The mushrooms will leave water. Cook till the mushroom gets cooked and the water is reduced completely .

2. Add garlic paste. Saute well till the raw smell goes. Then add Turmeric powder, Cumin powder, pepper powder and coriander powder. Mix well and allow it to cook for 2 minutes in low flame.

3. Add salt, coconut vinegar and mix well. Saute for a minute and switch off the flame.

Serve with Rice, Roti…
