Kalan puri – Mushroom Masala – Street food

One of the famous street food that you can find in all roadside chat shops is kalan puri/mushroom masala. As a kid even I was so attracted by this dish. The vendors used keep the fried mushrooms/Cabbage them ready. When we order for it they used to prepare the masalas with all the sauces and mix the fried ingredients to it and mix well and serve them hot with some onions,corn flakes. The dish is so red and it always tempts me to eat. But we were not allowed to eat it often. I always wonder to see the street vendors selling chaats, noodles, fried rice cooking them so fast. Though the name is mushroom masala/kalan puri they are mostly made with cabbage and cauliflower and later only after tasting some mushroom dishes. I came to know that.

Last Week I got mushrooms and cabbage at an offer price. So I decided to make this chaat item.

Let us see how to make kalan puri.

Preparation Time: 30 mins

Serves: 2 -3


For Frying

Mushroom – 250g

Chopped Cabbage – 2 cups

All-purpose flour /Maida – 1/2 cup

Corn flour – 1/4 cup

Red chilli powder – 1/2 tbsp

Turmeric powder – 1/2 tsp

Garam masala – 1 tsp

Ginger garlic paste – 1/2 tbsp

Salt as required

Oil for frying

For Preparing masala

Oil – 2 tbsp

Onion – 1 (medium-sized, chopped)

Ginger garlic paste – 1 tsp

Red chilli powder – 1 tsp

Garam masala – 1/2 to 1 tsp

Soy sauce – 2 tsp

Tomato sauce – 1/4 cup

Red chilli sauce – 1/2 tsp

Salt as per taste

Cornflour – 1 tbsp

For Garnishing

Chopped Onion – 1/4 cup

Chopped Coriander leaves – 1/8 cup

Lemon wedges


1.Wash the mushrooms well. Then drain the water completely and chop them into small pieces. Also, chop cabbage into small pieces. Take chopped mushrooms and cabbage in a mixing bowl.

2. To the mixing bowl, add all-purpose flour, cornflour, Turmeric powder, red chilli powder, garam masala and ginger-garlic paste. Mix well with the hands. Then Sprinkle water little by little and make it into a pakoda dough-like consistency. Add salt as required and mix well.

3.Heat oil in a kadai/pan. Then drop the mixture in small balls and fry them to golden. Remove them and put it in a bowl lined with tissue paper. Similarly, Fry everything in batches. Then break the fried balls into small pieces roughly with hands.

4. In a kadai heat oil, Then add the chopped onions. Saute them well on a medium flame for 2 mins. Then add ginger garlic paste. Saute until the raw smell leaves.Add red chilli powder and garam masala powder. Mix well. Add soy sauce, tomato sauce, chill sauce and mix them well together. Prepare slurry by mixing 1 tbsp of cornflour in 1/2 cup of water. Add the slurry to the pan. The masala will start getting thick. Then add the fried pieces to it. Add salt if required and mix well. Remove from flame.

Serve hot garnishing it with onions, Coriander leaves and lemon wedges.
