Batter for Crispy Dosa

2 in 1 Dosa batter

I used the Dosa batter made by the first method. Even I have tried masala dosa with the second method too. Both the way the Dosa tastes yummy with the potato masala. This Potato masala can be also had with Poori/Puri. Serve the masala dosa hot with Sambar or Chutney.

INGREDIENTS REQUIRED

Dosa Batter as required

For Making Potato masala

Oil – 1 tbsp

Mustard seeds – 1/2 tsp

Chana dal – 1. 5 tbsp

Urad dal – 1/2 tbsp

Onion – 1(Medium-sized, chopped)

Green chillies – 4 (chopped)

Curry leaves – a sprig

Asafoetida – 1/8 tsp

Potato – 2

Turmeric powder – 1/2 tsp

Salt to taste

METHOD

1.Wash the potatoes, make crosses in the skin so that it is easy to peel the skin when it is cooked. Add the potatoes to the pressure cooker. Cook until the potatoes get soft. Allow the potatoes to cool down. Then remove the skin from it and Mash the potatoes well.

2.Heat oil in a pan. Add Mustard seeds to it. Let it splutter. Then add chana dal, urad dal. Fry them to golden. Add chopped onions, chopped chillies, curry leaves. Saute the onions to light golden. Add Turmeric powder, salt and asafoetida to it. Saute it for a minute. Then add the Mashed potatoes to it. Mix well and saute it for 2 minutes on low flame.

3. Heat the tawa and Grease it with oil. When it is hot. Pour a ladle of dosa batter and flatten it. Add ghee or oil to the Dosa. Allow the Dosa to get golden down. Then flip the Dosa to another side for a few seconds. Turn it again. Place the potato masala to it in the centre and fold the Dosa.

Serve hot with Sambar or Chutney.
