
Fried rice is so easy and quick to make if all the required things are kept ready. In this gobi fried rice, we use fried gobi or gobi 65 for this fried rice. I like chicken 65 or fried chicken fried rice than the normal chicken fried rice. Bcoz I love chicken 65 or the fried one a lot. That was the inspiration which made me cook this fried gobi fried rice. It tastes more delicious than the regular fried rice and you can have it plain as the fried gobi itself gives a nice crunchy texture to the fried rice. I served it along with tomato sauce and chilli vinegar. I used freshly cooked rice you can also use leftover rice instead.

INGREDIENTS REQUIRED
For frying cauliflower
Cauliflower – 1
Turmeric powder – 1/2 tsp
Red chilli powder – 1/2 tbsp
Salt to taste
Corn flour – 1.5 tbsp
Rice flour – 1/2 tbsp
Oil for frying
For Preparing fried rice
Oil – 2 tbsp
Basmati Rice – 1 cup
Salt to taste
Chopped ginger – 1 tbsp
Chopped garlic – 1 tbsp
Onion – 1(medium-sized, chopped)
Soy sauce – 1/2 tbsp
Vinegar – 1/2 tbsp
Pepper powder – 1 tsp or as required
METHOD
1. Wash and soak rice in water for about 30 mins. Then drain the water completely. Heat water in a pot. When it starts to boil add salt to it. When it comes to a rolling boil, add the drained rice. Allow it to cook. It will take about 6 to 7 minutes to cook. Then drain the water completely and allow it to cool down. Puff it up with a fork.

2. Cut the cauliflower into small florets. Put them in hot water for 5 minutes then add turmeric powder, red chilli powder, salt, cornflour, rice flour and mix well. Heat oil in a pan and fry them to golden in batches. Transfer them to a plate and keep aside.

3.Heat oil in a pan. Add chopped ginger and garlic to it. Saute them well for a few seconds. Then add chopped onions. Saute for a minute. Then add soy sauce, fried cauliflower and mix well. Switch off the flame.

4. Add the cooked rice immediately and mix well gently or by tossing. Add pepper powder, vinegar and salt as required and mix well.

Gobi fried rice is ready.
