Achari Gobi – Cauliflower with Pickle spices

The first dish which I tasted with achari flavour was Achari chicken. We had it from Nawabi Swaad restaurant, Al hail in Muscat. When I went through the menu I definitely want to try it because of its name achari. I knew that achar means pickle. We wanted to know how the taste would be so that I try to cook that recipe at home later. We had that achari chicken with butter naan and it was so tasty and tempting one and we all become a fan of that dish.

Usually achari recipes are cooked with non veg like chicken,mutton or veg like gobi,potato,brinjal,paneer as a main ingredients along with the pickle spices. In some achari recipes mango pickles are also added additionally.

This achari gobi is a vegetarian version and it has the pickle spices in it. You can have it with rice, dal or pulao or roti, naan.

Preparation Time : 20 mins

Cooking Time : 45 mins

Serves : 3-4


Cauliflower/gobi – 3.5 Cups

Oil – 2 tbsp

Kalonji – 1 tsp

Ginger garlic paste – 1 tbsp

Onion – 2 cups (chopped)

Tomato – 1 cup (chopped)

Curd – 1/4 cup

For Dry roasting and grinding(Achari masala)

Mustard – 1 tsp

Cumin seeds – 1 tsp

Fennel seeds -1 tsp

Fenugreek seeds -1/4 tsp

Dried red chillies – 8 (adjust as per your taste)

Coriander seeds – 1/2 tbsp


1.Cut the cauliflower into small florets.Heat water in a pan.Bring it to nice boil.Add the florets to it.Allow it to cook in it for 5 minutes.Then switch off the flame and drain the water from it.

2.In a pan, dry roast mustard, cumin seeds, fenugreek seeds, fennel seeds, Dried Red chillies, coriander seeds in low flame for few minutes .Then switch off the flame and allow it to cool down.Then grind it to a fine powder..

3.In a pan , heat oil.When it’s hot, add the kalonji seeds, chopped onions.Saute the onions to golden.Then add the ginger garlic paste.Saute until the raw smell goes off.Add the chopped tomatoes saute them so that it gets mushy.Add salt .

4.Cook until the the oil begins to separate.Add turmeric powder, red chilli powder,ground powder,curd, green chillies, cauliflower florets and mix well.Add a cup of water and cook covered for 10 minutes.

Serve hot with Rice, pulao or roti.
