
A different style egg curry which I learnt from my chinnamma.You can have this with Rice or appam and idiyappam.

Serves : 3
INGREDIENTS REQUIRED
For Making Omelette
Egg – 4
Onion -1/3 cup(chopped)
green chilli – 1
cumin powder – 1/4 tsp
Pepper powder – 1/4 tsp
red chilli powder – 1/4 tsp
Salt to taste
For Grinding
oil – 2 tbsp
mustard – 1/2 tsp
onion -1 (sliced)
Tomato – 1 (chopped)
Drumstick – 1(cut into pieces)
Turmeric powder – 1/2 tsp
Red chilli powder – 1 tsp
Salt to taste
curry powder / masala powder – 1 tbsp
METHOD
1.Break the eggs into a steel bowl. Beat them well with a whisk or spoon. Add chopped onions, chopped green chillies, turmeric powder, red chilli powder, cumin powder, pepper powder, a little salt and mix well.

2. Steam the egg mixture until it is cooked well. you can check it by poking it with a toothpick or knife, it should come out clean. Allow it to cool down. Then slice them into big pieces.

3. Grind the grated coconut into a paste adding water. Heat oil in a pan. Add mustard seeds. Let them splutter. Then add sliced onions, chopped tomatoes, drumstick pieces. Saute them for few minutes. Then add salt to taste, red chilli powder and mix well. Add the ground coconut paste and add 1.5 cups of water. Allow it to boil. Add the curry powder.

4. Bring the curry to a nice boil. Add the omelette pieces. Cook for 2 minutes in low flame and then switch off the flame.

Serve hot with Rice.
