
Almost all groceries are going to finish.So tried to manage a lunch with the leftover veggies and frozen veggies.Fried rice would be a great choice at this time.I prepared it and we had it along with tomato sauce for lunch.

INGREDIENTS REQUIRED
Basmati Rice – 1 cup
Oil – 2 tbsp
Garlic – 1 tbsp(chopped)
Spring onion (white part) – 1/2 cup ( chopped) or onion -1/2 cup(chopped)
Beans -1/2 cup(thinly sliced)
Carrot -1/2 cup( thinly sliced)
Capsicum -1/2 cup(thinly sliced)
Cabbage – 1/2 cup( thinly sliced)
Sweet corns -1/2 cup(thinly sliced)I used frozen ones.
Salt to taste
Pepper powder – 1 tsp
Soy sauce – 1.5 tbsp
Vinegar -1 tbsp
Spring onion (green part) – 1/3 cup
METHOD
1.Soak the basmati rice for about 20 mins.Boil water in a pot.when it comes to rolling boil, add salt and oil.Then drain the soaked rice and add it.Cook the rice until they are 90 percent cook.Then switch off the flame.Drain the water and allow the rice to cool down.Fluff up the rice with a fork.You can also use leftover rice.
Heat oil in a pan in medium flame .Add chopped garlic .Saute them for a minute and then add the spring onions white part.Saute it for a minute.Then add all the veggies.Saute them for few minutes until they are cooked and crunchy.

2.Add salt, pepper powder, soy sauce, vinegar and mix well with the veggies .Place the flame in low and Add the cooked rice to it.Mix well gently.Finally add the spring onions green part and mix well.Switch off the flame.

Serve hot with Sauce or with chilli paneer, chilli mushroom.
