Palak mutton biryani

Today I prepared this Palak mutton biryani for lunch along with onion Raita for lunch.As I had a bunch of palak lying in my fridge.I thought of making palak mutton.Then I decide to cook palak mutton biryani so that it will be tasty and I can make a post of it in blog too. I love biryani and cooking it.I always try to experiment with biryani.This is one such try and it came out so well and we enjoyed eating it.

Serves : 2

INGREDIENTS REQUIRED

For cooking mutton

Mutton – 350 g

Salt – 1 tsp

turmeric powder – 1/2 tsp

Red chilli powder – 1/2 tsp

For making masala

Oil – 1/4 cup

cinnamon – 2 inch piece

Cardamom – 4

Cloves – 4

Onion – 2 (medium sized, thinly sliced)

Ginger garlic paste – 1.5 tbsp

Turmeric powder – 1/2 tsp

Red chilli powder – 1.5 tsp

Coriander powder – 2 tsp

Green chillies -4(sliced)

Curd – 1/3 cup

Salt as required

Palak leaves – 1 bunch

Garam masala – 1 tsp

chopped mint – 1/4 cup

chopped coriander – 1/4 cup

Lemon – 1( small size)

For cooking rice

Cinnamon – 2 inch piece

Cloves – 5

Cardamom – 4

Oil – 1 tbsp

Basmati rice – 1.5 cups

Salt to taste

For Garnishing

Garam masala – 1/4 tsp

Chopped mint

Chopped coriander

Ghee

METHOD

1.Wash the basmati rice well in water and soak it in water for about 30 minutes.

2.Remove the stalk from the leaves.Wash them well and chop them.

3.Clean and wash the mutton pieces.Add the cleaned mutton pieces to a pressure cooker and to it add turmeric powder, red chilli powder and salt.Add 1/2 cup of water and cook for 6 whistles or until the mutton gets tender.

4.To a pan or pot, heat oil.To it add cinnamon, cloves and cardamom.Let them splutter.Then add sliced onions into it.Saute them until it turns light .Add ginger-garlic paste.Saute until the raw smell leaves.

5.Add the cooked mutton into the pan.Add turmeric powder, red chilli powder and mix well.Add sliced green chillies, curd.Mix it well.Add mutton stock if anything is left while cooking mutton.Check for salt and add as required.Add the chopped palak leaves.Allow the palak leaves to cook.

6.Once the oil begins to separate add garam masala, mint leaves, coriander leaves and lemon juice and mix well. Then switch off the flame.

7. Take sufficient amount of water for cooking the rice. To it add cinnamon, cloves , cardamom, salt for the rice and a tbsp of oil.Bring the water to a rolling boil.Then add the drained rice into it.When the rice is about 80% cooked remove it from the water and layer it over the prepared masala.

8.Layer the rice over the masala.Add chopped coriander, chopped mint, garam masala and ghee on its top.Add about 1/2 cup of the boiled water in which we cooked rice to it sides .Then cover it with a lid and place a weight (the boiled water vessel)over it and cook in low flame for 10 minutes.Open the lid after 10 or 20 mins.

Palak mutton biryani is ready.

Serve with Raita.
