Cauliflower curry – cauliflower kuzhambu – Chettinad style cauliflower curry

I prepared this curry along with Rice, beans stir- fry for lunch. It also goes well with Idli, dosa or chapati. The freshly roasted and ground masala gives a good taste and aroma to the dish.

INGREDIENTS REQUIRED

For Dry roasting and Grinding

Cinnamon – 2 inch piece

Cardamom – 2

Cloves – 3

coriander seeds – 2 tbsp

Peppercorns – 1 tsp

Cumin seeds – 1 tsp

Fennel seeds – 1 tsp

Dried red chillies – 7(adjust as per taste)

poppy seeds – 1/2 tbsp

Grated coconut – 1/2 cup

For curry

Cauliflower – 400 g

Oil – 2 tbsp

Mustard seeds – 1/2 tsp

Shallots – 10 (sliced roughly)

Dried red chillies -3 (broken into pieces)

curry leaves – 2 sprigs

Tomato – 1(medium size, chopped)

Ginger garlic powder – 1/2 tbsp

turmeric powder – 1/2 tsp

red chilli powder – 1/2 tsp

Salt to taste

METHOD

1.Cut the cauliflower into florets. Boil water in a pan, bring it to a nice boil then add the cauliflower florets into it also add some salt to it. allow it to cook in it for 10 minutes then switch the off flame and drain the water completely and keep the cauliflower aside.

2.Dry roast in low flame cinnamon, cloves, cardamom, coriander seeds, peppercorns, cumin seeds, fennel seeds, dried red chillies until a nice aroma of it comes. Then switch off the flame and add poppy seeds. dry roast it in the heat itself. Add grated coconut and mix well, then switch on the flame and roast it until the coconut gets dry and roasted well. Switch off the flame. Allow it to cool down.

3.Transfer the dry roasted ingredients into a movie jar or blender jar and grind into a smooth paste adding water.

4.Heat oil in a pan, to it add mustard seeds. let them shutter. Then add shallots, dried red chillies, curry leaves and saute them well in oil.when the shallots have turn light golden, add chopped tomatoes, salt and saute it well until it turns mushy. Add ginger-garlic paste.saute until its raw smell leaves. Add the cauliflower pieces.

5.Add turmeric powder, red chilli powder and mix well. Add the ground masala and mix it well with the cauliflower. Add water as required. I have added around 2 cups of water and mix well. Check for salt and add as required. Cover and cook in medium flame for 7 minutes. Then switch off the flame.

Cauliflower curry is ready.

Serve with Rice, idli,dosa or chapathi.
