Sweet corn Pulao

I usually make this pulao with sweetcorn. There will be always a packet of frozen sweet corn lying in my freezer. I add them in sandwich or chapati filling, chat, pizza, fried rice and also in pulao. I love grilled sweetcorns. If I get the fresh sweet corn or corn I used to grill them and rub it with lemon and apply red chilli powder and salt on it. It is so tempting, especially during winters.

Sweet corn pulao is my daughter’s favourite and I too like it.This pulao is really simple and time saving.There is no need of chopping of onions,ginger garlic paste.You can make it if you have basic ingredients and sweet corn.I have used frozen sweet corn as they handy are handy always.If using fresh ones you can boil them and add.Sometimes I used to add capsicum also along with sweetcorn, but this time I made it only with sweetcorn.

I mostly pair this pulao with paneer butter masala or paneer masala. This time I made egg butter masala to go with this pulao and it tasted so yummy.I will post the recipe of it in the coming days.

Serves : 2

INGREDIENTS REQUIRED

Ghee / Oil – 2 tbsp

Bay leaves – 1

Cinnamon stick – 2 inch piece

Cardamom – 3

Cloves – 4

Cashew nuts – 10 nos

Frozen Sweet corn – 3/4 to 1 cup

Green chillies – 4

Coriander leaves – a few

Mint leaves – a few

Basmati Rice – 1 Cup

Salt to taste

Water – 1.5 Cups

METHOD

1.Wash the rice and soak it in sufficent amount of water for about 30 mins.

2. Heat ghee in a pan. Add bay leaves, cinnamon, cardamom, star anise. Let them splutter. Then add the cashews. Fry them to golden. Add the sweet corns, saute it in the ghee for a minute. I have used frozen sweet corn. If using fresh one boil them first and add then slit green chillies, chopped coriander leaves and mint leaves. Drain the water from the soaked basmati rice and add the rice into the pan.

3. Mix the rice well with the sweet corn. Saute the rice in the ghee on low flame for 2 minutes. Add salt and 1 and 1/2 cups of water. Place the flame in high. Check for salt and add if required. When the water is boiled well and rice starts to appear.place the flame in low, cover and cook in low flame for 10 minutes. Then switch off the flame. Open after 10 minutes.

Sweet corn pulao is ready.

It can be served with paneer butter masala, Butter chicken,paneer masala.
