
I love brinjals particularly I love some dishes made of it. This whole brinjal is also my favourite. It is a perfect dish to have with Rice or variety rice. I will go well with Rice and sambar, dal, rasam…
I also make Andhra style stuffed brinjal fry some times. But this fry is an instant one with the masala powders available at home. Instead of amchur powder, you can add lemon juice.

INGREDIENTS REQUIRED
Brinjal – 300g (8 nos)
Red chilli powder – 1 tbsp
Turmeric powder – 1/2 tsp
Coriander powder – 1.5 tsp
cumin powder – 1 tsp
amchur powder – 3/4 tsp
garam masala powder – 1 tsp
Salt to taste
Oil – 2 tbsp
curry leaves – a few
METHOD
1.Wash the brinjal well and make a plus cut halfway so that they are intact.Put them in a bowl of water to avoid discoloration

2. In a plate, take red chilli powder, cumin powder, coriander powder, turmeric powder, amchur powder,salt to taste and mix well with the hands. Add a tsp of oil and mix well.Then stuff the masala into the brinjal and keep it ready.

3. Heat oil in a pan, Add few curry leaves.Then add the brinjal into it.Cover and cook in low flame and flip to the other side after few minutes.Cook until the masala is fully coated in brinjal and the brinjal is completely cooked.

Stuffed Brinjal fry is ready to be served.
