Gobi manchurian – Cauliflower manchurian

I like Indo Chinese recipes, but I am not a great fan of them. Just for a change of taste, I used to make it at home. I love fried chicken fried rice a lot likewise I also like fried cauliflower fried rice, paneer fried rice and schezwan fried rice. I prepared this gobi Manchurian day before yesterday along with fried rice. It’s a very good starter. Fry the cauliflower pieces to crisp and keep them ready. Then prepare the Manchurian sauce and add the fried gobi just before serving so that the gobi is crispy. I love the gobi pieces to be crispy so I do this way. I have used homemade red chilli paste in this recipe. For that soak 10 Kashmiri Red chillies in hot water for at least 30 mins, then grind it into a smooth paste adding 2 tbsp of vinegar.

INGREDIENTS REQUIRED

For frying cauliflower

Cauliflower florets – 600 g

Maida – 6 tbsp

Corn flour – 6 tbsp

Salt to taste

White Pepper powder – 1 tsp

Kashmiri Red chilli powder – 1 tbsp

Oil for frying

For Preparing sauce

Oil – 1.5 tbsp

Sliced Garlic – 1.5 tbsp

Chopped shallots white part – 1/2 cup

Red chilli paste – 3 tbsp (I soaked around 10 Kashmiri Red chillies in water for about an hour, then ground it into a smooth paste adding about 2 tbsp of vinegar)

Soy sauce – 1.5 tbsp

Tomato ketchup – 2 tbsp

Sugar – 1 tsp

Salt to taste

Corn flour – 1 tbsp

Spring onion green part chopped – 1/4 cup

METHOD

1.Cut cauliflower into small florets. Wash them well in water. Heat water in a pot. When it comes to boiling add the cauliflower into it. Allow it to boil for 5 mins. Then switch off the flame. Drain the water completely and keep the cooked cauliflower aside. Take a mixing bowl, to it add maida flour, corn flour, Kashmiri Red chilli powder, salt, pepper powder and mix well. To it add water and make it into a Dosa batter consistency. Add the cauliflower florets into it and mix well. Heat oil for frying in a pan. When the oil is hot add the marinated cauliflower pieces and fry them in medium flame to golden crisp. Fry all the cauliflower pieces in small batches and keep them aside.

2. Heat oil in a pan. To it add garlic, chopped spring onions white part. Saute them for a minute. Then add red chilli paste, soy sauce, tomato ketchup, sugar and mix well. Check for salt and add if required. Prepare a slurry dissolving 1 tbsp of corn flour in 1/2 cup of water. Add it into the sauce. The sauce will begin to thicken,mix well. Add the fried cauliflower pieces and give a mix. Finally Add chopped spring onions green part into it.

Gobi manchurian is ready.

Serve with fried rice or fried noodles.
