I love eating and cooking brinjal especially brinjal fry dishes.I make different gravy,fry,stir fry with this brinjal and one such recipe is this brinjal tawa fry.It is simple to prepare but taste amazing with Rice and Rasam/Sambar or any Kuzhambu varieties.Thin round slices of brinjal are mixed up with some spices and fried with little oil in tawa.Here is my version of Brinjal Tawa Fry.
Preparation Time : 5 mins
Marination time : 10 mins
Cooking Time : 15 mins
Serves : 2 persons
INGREDIENTS REQUIRED
Oil as required
For marination
Gram flour – 1 tbsp
Corn flour – 1 tbsp
Turmeric powder – 1/4 tsp
Red chilli powder – 2 tsp
Coriander powder – 1/2 tsp
Cumin powder – 1/2 tsp
Lemon – 1/2
Salt to taste
METHOD
1.Wash and cut brinjal into thin round slices.In a mixing bowl take all the ingredients for marination except lemon.Add 1/2 tsp of oil to it and mix them nicely.
2.Squeeze lemon juice to it.Add little water and make a smooth paste of it.Marinate brinjal pieces with the paste for about 10 mins.
3.Grease tawa with oil and add marinated brinjal pieces.When one side turn golden and fried nicely flip to the other side and fry it.When they are nicely fried remove from tawa.
Serve it with Rice and Rasam/Sambar/Kuzhambu Varieties.
