Crispy Tindora Fry- கோவைக்காய் ஃப்ரை-Crispy Kovakkai Fry-How to make Kovakkai/Tindora Fry

Tindora or Kovakkai has a unique taste than other veggies. I feel like it has a little sourness in them. Have you ever felt so? You can add this veggie to sambar,avial,poriyal…Last, before Friday I was sick so I was feeling lazy to cook lunch. So my loving husband took us to the nearby Arya Bhavan hotel. I am a huge fan of Vegetarian South Indian thali at hotels. If we were at the hotel for lunch, my choice will be mostly South Indian Thali either it would be veg or non-veg. We ordered for a Chennai meal and Andhra special meal. So In that thali, they served Andhra style Tindora fry with groundnut(Dondakaya Vepudu). I liked it. I don’t like peanut so I gave them to my hubby and had the Tindora/Kovakkai alone. I loved the taste of it and inspired by it I thought of making a deep-fry out of Kovakkai/Tindora this week. I made this fry with basic ingredients and it turned out to be a successful dish from my kitchen. With no further delay here is the recipe for it.

Serves : 3

INGREDIENTS REQUIRED

Kovakkai/Tindora – 250 g

Oil for frying

Turmeric powder – 1/2 tsp

Cumin Powder – 1/2 tsp

Kashmiri Chilli powder – 1 and 1/2 tsp

Red chilli powder – 1 tsp

Cornflour – 1 tbsp

Maida/All purpose flour – 1 tbsp

METHOD

1. Wash the veggie. Pat them dry. Trim off both the ends of Kovakkai. Now cut them to half. Then chop them into thin slices.

2. Add the chopped Kovakkai slices to a mixing bowl. Add all the ingredients to it along with few drops of oil. Give them a nice mix with your hand.

3. Heat oil in a pan for deep frying. When it is hot enough add the marinated kovakkai/Tindora in batches and fry them to Crispy, Golden.

Serve them with Rice or any Curry It also goes well with Variety Rice.
